If you don't know by now I absolutely love raspberries, they are natures little morsels of perfection. Not only that but they are the perfect combination to another favourite and must have in the pantry item chocolate. Chia puddings are so easy to make and so good for you making breakfast just that little bit different and enjoyable.
I find this one will make enough for one large glass or 2 smaller ones, just depends on how much you eat for breakfast. Remember chia seeds are an excellent source of fiber and will fill you up. I split this in two glasses and top it with fruit, nuts, muesli or grated dark organic chocolate, its totally up to you.
1/4 cup Chia seeds ( I used white seeds)
1 1/4 cup of coconut milk ( might need a little extra, can use almond milk instead)
1 Tablespoon raw cacao powder ( I used Loving Earth)
1-2 teaspoons maple syrup
Place chia seeds in bowl, add coconut milk and whisk. Add the cacao powder and maple syrup stir until all combined. Pour into a glass jar or glasses and refrigerate overnight, they will thicken to a pudding like texture. The next morning add your favourite toppings, sit down and enjoy these yummy and totally good for you breakfast puddings.
